HAZARD ANALYSIS CRITICAL CONTROL POINT

(HACCP)

WHAT IS HACCP?

Hazard Analysis Critical Control Point (HACCP) is a science-based, systematic, and preventive approach to food safety management that addresses the identification, evaluation, and control of biological, chemical, and physical hazards throughout the chain of food production.

The Codex Alimentarius Commission adopted HACCP in 1997.

HACCP is a system of seven principles that helps food business operators look at how they handle food and introduces procedures to ensure that the food produced is safe to eat and it is now used worldwide throughout the food industry.
